Southern Chain Waldo’s Chicken & Beer to Open in Louisville

Louisville is about to get another chicken joint. The first full-service Waldo’s Chicken & Beer in the local market will be located at 10700 Meeting St. in Prospect on Tuesday, Sept. 20.

Founded by Mark Waldo in Nashville, Tenn. in 2019, this fast casual chicken brand currently has seven locations in four southern states including Alabama, Arkansas, Oklahoma, and Tennessee. This is the third investment for Endeavor Restaurant Group, who owns all five LouVino Restaurant and Wine Bars, and signed a partnership agreement with Big Bad Breakfast last year.

The first Big Bad Breakfast Louisville location opened in February 2022 and the second is coming later this year. 

“We’re excited to open the first full-service Waldo’s in the booming area of Norton Commons,” said Founder & CEO of Endeavor Restaurant Group Steve Ritchie. “This latest addition meets all of Endeavor’s criteria for a great restaurant, including exceptional food and service in a lively atmosphere. Melissa and I were very impressed with the concept during a visit last year to Nashville.

“For the Louisville opening, we elevated the experience with more TVs, a gaming area and an expanded full-service menu, aiming to make this an exciting place to watch a game and enjoy exceptional food and drinks with friends and family.”  

Waldo's Chicken & Beer is known for its scratch made southern fried and slow-roasted chicken four ways: on the bone, on a bun, in a bowl, or in a basket. In addition to its eight original sauces, and house made sides including its signature cheddar biscuits for lunch and dinner, Waldo’s Norton Commons location will offer an array of sharable dishes for the whole family. 

Diners can enjoy more than 16 local and regional beers on tap, with additional options available by the bottle and can. In addition to a full bar, Waldo’s elevated cocktail menu will feature rotating frozen drink specials, including a margarita and bourbon slushie.  

Designed and constructed by Miranda Construction, the 4,100 square-foot space features full-service indoor and outdoor seating areas, as well as catering and delivery to your home or business. The vibrant décor, including a large, oval-shaped island bar in the center of the restaurant and 30 big screen televisions emits an energetic atmosphere just in time for football season. A custom gaming area will feature dart boards, a Jenga table, and a Golden Tee golf arcade machine.

Waldo’s Chicken & Beer will be open for lunch and dinner from 11 a.m. to 10 p.m. Sunday through Thursday, and 11 a.m. to midnight Friday and Saturday beginning Tuesday, Sept. 20. Now hiring all positions, to apply, visit WaldosChicken.com
