Wood-Fired Cooking Restaurant Paseo Opens in the Highlands

Weyland Ventures, in partnership with the Common Bond Hotel Collection, announced the opening of Paseo, a wood-fired cookery featuring dishes inspired by the flavor profiles of Southern Europe.

The 154-seat metropolitan-styled restaurant is set in an indoor/outdoor environment in Louisville’s lively Highlands district. The culinary team is led by Jeremy Frederiksen, who serves as Executive Chef, and is supported by Chef Mike Wajda, the Director of Culinary at the Common Bond Hotel Collection. The creative partnership between the two chefs has existed for seven years and is the backbone of the Common Bond Hotel Collection culinary program. Paseo will open to the public on June 29, 2023, serving dinner Tuesday-Saturday until the Myriad Hotel opens in August 2023 and will then offer lunch and dinner daily.

Paseo was conceptualized with a unique identity in mind to create an experience where every table has been curated for warmth and style. Guests will be able to choose from a variety of seating options including indoor bar seating of up to 20, indoor/outdoor lounge seating of up to 34, poolside chef’s lounge seating of up to 46 and indoor table dining up to 54. Designed in partnership with WorK Architecture and the Common Bond Hotel Collection, interior touches include lush and vibrant colors and textures that echo the eccentricity of the neighborhood.

Chef Frederiksen, in partnership with Chef Wajda, has designed a menu at Paseo that is comprised of inventive and approachable dishes that will greet guests with its wood-fired regional ingredients and robust spice profile. Inspired by the flavors of Middle Eastern and Mediterranean cuisine, plates will feature fresh ingredients sourced from 25-plus different local purveyors, including Harmony Fields, Rivercrest Farm, 3D Valley, Frondosa and Kenny’s cheese. The menu will include homemade pasta, land and sea paella dishes, traditional entrées and sharable sides.

Innovative yet simple signature dishes include Spicy Greens & Charred Beans Salad with crispy caper and onion vinaigrette, Harissa Cauliflower Steak prepared with smoked olive, toasted sunflower, coriander gremolata and torn herbs, Smash Burger Lamb Kafta & Wedges with mahón, harissa onion jam and berbère aioli, and Mojo Rojo Teres Major Wagyu Steak with patatas bravas and watercress.

The cocktail program at Paseo will pay homage to European drinking trends and traditions while exploring new techniques to facilitate new experiences. Innovative but approachable cocktail styles will emphasize seasonal fruits and vegetables, providing unique flavors to satisfy both the adventurous and casual drinker.

Offering a sense of place through its cocktails, the menu will feature partnerships with many local distilleries, including a private select from Makers Mark. A signature element of the menu will explore the European style of spritzing best embodied by the Primavera, a fun twist on the classic Aperol twist with grilled peach, clove, Moscato and orange. Paseo will also offer a comprehensive wine list with selections from southern Italy, France, Israel, Lebanon and California and a tap system spotlighting local breweries.

Upon opening, Paseo will host dinner service from 4:30 p.m. to 9:30 p.m., Tuesday–Thursday and 4:30 p.m. to 10:30 p.m. Friday and Saturday. Beginning in August, Paseo will open daily for dinner and offer lunch service from 11 a.m. to 2 p.m. Monday–Friday, and brunch from 9 a.m.–2 p.m. Saturday and Sunday.
